- 4 Russet potatoes whole, skin on
- 2 tbsp olive oil extra virgin
- 1 tsp kosher salt
- 1 tsp ground black pepper

Preheat oven to 425 degrees-F.

Wash the potatoes thoroughly in cold water to remove any dirt

Drizzle the olive oil on a piece of foil or parchment paper and sprinkle the salt and pepper over the oil.

Take each potato and roll it around in the oil/salt/pepper mixture until it's completely coated.

Place the potatoes directly on the oven rack, or on a cookie sheet, and place in the oven.

The potatoes are done when a fork penetrates to the center easily.

Butter, Sour Cream, Chili, Chives, Bacon, Cheese, and pretty much anything else you can imagine!
