Banana Bread

Here’s a simple, fast and amazing Banana Bread recipe!

Way Simple and Way Good. Can even be made on Saturday morning before the kids are up when you see those last few remaining bananas turning brown on the counter!

Ingredients
Mix together dry ingredients in a mixing bowl
  • 1 3/4 cups flour (8 oz by weight)
  • 2 tsps baking powder
  • 1/4 tsp baking soda
  • 1 tsp kosher salt
Mix wet ingredients in a separate bowl
  • 1/3 cup unsalted butter softened
  • 2 eggs
  • 2/3 cup sugar
  • 1 1/2 cups soft bananas, mashed (3-4 bananas)
Optional:
  • 1 cup walnuts (or pecans) chopped
Instructions
  1. Preheat oven to 350F.  Grease an 8x4" loaf pan (or an 8" cake pan) using PAM or butter, and then dust lightly with flour.

  2. Add wet ingredients to dry ingredients and mix by hand with a spatula until combined.  Don't over mix!

  3. Gently fold in the nuts if included.

  4. Pour the batter into the baking pan, and bake for 45 mins.  Check for doneness with toothpick and remove from oven as soon as the toothpick comes out clean.
